Mouse Trap Alert

I have to put mouse traps up in my attic. It's rather a pain to have to check on them all the time so I wanted to create an alert with ESP Easy. I was hoping I might outline what my goals are and see if anyone has built something like this before so I could learn from others. It has been awhile since I have messed around with ESP Easy so a little help would be great!

Goal - When a trap has been triggered I would like to get notified. Email / SMS would be great options

I have attached an image of the traps I plan to use. The sensor will be some kind of contact spring setup.

Workflow -
System is shut off before getting setup via switch
Trap is set which will connect contact spring sensor
System is turned one.
Once system is turned on it will look to connect to wifi (some kind of blinking light or colored light system will be used to identify mode)
If connected to wifi it will go to sleep and wake up every X hours
When it wakes up it will test for an open circuit via the contact springs
No open circuit, it goes back to sleep for X more hours
Open circuit, it send off the email / sms
Would be cool if it also blinks an LED when it gets triggered so it's a little easier to find in the attic

I don't see any of this being tough based on past experiences with ESP Easy but I'm really rusty so I wanted to toss it out there for some help / guidance.

Could this be detected using an IR LED and sensor?

Alternatively you can also add something like the CCS811, but I guess that will be as a last resource, to detect the really smelly gasses of a rotting mouse :)

YUCK! HAHAHAHAHA!
I went with the circuit based sensor just to keep it easy to detect and install. Open to ideas but maybe not the rotting mouse one

Maybe the trap already becomes a bit more conductive due to leaking fluids from the mouse, before it starts rotting. :)

OK, I'll stop now.
Perhaps tomorrow I can come up with slightly more serious ideas :)
