Using a D1 mini, on power up it sometimes just blinks the blue LED for long, starts a lot later.
Then after a while it goes again into this blinking mode and goes unreachable.
Sounds like some panic mode. How to debug/figure what's wrong?

Check the serial log (The Flasher tool has a monitor tool included)

Sounds like it may crash a few times to start over again.
After some crash/reboots it will try to disable some tasks to see if it may successfully boot.
One of the reasons for crashes may be when some sensor becomes unresponsive.
But also unstable power supply may cause crashes.
N.B. power supplies may become bad over time as the capacitors in them do tend to age.

If you have any serial debugging output enabled, you can use a serial terminal program to monitor the output from the D1 mini. This can help you identify errors.
Verify that the board is not overheating by checking the temperature. Also check your wiring and power supply.
