Support for ESP32-S2 is quite minimal at the moment, indeed, partly because there are only a few boards available, and S2 support in Arduino is also not very mature yet.
Next to that, the Dummy device is indeed missing from the Custom ESP32 set. (I think it should be added to the Custom builds for any ESP32 by default)

I'm not at my development system atm, so can't provide a local build, will do that later tonight (CET).

I was planning to add ESP32-S2 builds for all 4MB configurations we now have (except Ethernet, as that's not supported by the S2)
This way things can be tested even more.

But as Ton already mentioned, the ESP32-S2 support is very premature.
Only tested on my node as far as I know and there are still things to do.
Also I'm not really sure about the "build stability" as I had lots of issues when building it. Every build was somewhat of a hit-or-mis. Either it worked, or crashed immediately with only minimal changes in code.

Ah, I was under the impression that this had improved quite a bit, after you reverted to a more stable Arduino version.

I'll increase the use of my ESP32-S2 for testing then 8-)

Well after weeks/months of build frustration, just a few successful builds cannot take away my worries.
Mainly because I don't know yet why the builds failed in the first place.

I've created a local Custom build, including the Dummy device, and also the Neopixel (P028), as the ESP32-S2 Saola board has one on board (you didn't mention what board you have, but this one usually has a great price)

Many thanks! i'll use the ESP32S2 this christmas as light-controller. Let's see how stable it is.

in the last 7 days the ESP32S2 has a away better WiFi stability in my unifi-setup than the ESP32.

Please let us know if something with the -S2 is not OK.
For example, I have no idea if all the GPIO-handling is OK as a lot had to be changed to the GPIO handling for the -S2 and like I said I have probably been the only one playing with it.

The Dummy device is now included in all regular ESP32 Custom builds, a new release is available here
