What are the best WiFi settings?

I have an old ESP01-S running ESP_Easy_mega_20200703_normal_ESP8266_1M that picks up 17 APs when I do a Scan for WiFi networks.
I also have a Wemos D1 Mini (also an ESP8266) running ESP_Easy_mega_20211005_normal_ESP8266_4M1M that only picks up 3 APs.
These two devices are sitting right next to each other.

I tried altering the Wifi settings on the Wemos - but can't seem to improve the situation.

Any suggestions on what I could try next would be appreciated.

I think you are already at the "optimal" settings for what can be tweaked in ESPEasy.
One thing you can do, is set "extra WiFi scan loops" to 1 to test if it will see more nodes.
The scan period per channel is rather short. It seems to switch to a new channel as soon as a few APs (one?) have replied on a channel.
That period used to be longer on older SDK's, or at least it feels like it.
Now a scan takes 1000 - 1200 msec for 12 channels, which used to be roughly 2500 msec.
So that's why I added the option to perform multiple scans, to hopefully allow other APs to react within this short amount of time per channel.

I will soon remove the "Periodical scan wifi" checkbox, as it has lots of side effects.
But as a test, you can see whether it does help you to eventually get connected if that's the problem.
However, it will absolutely not make your connection more stable, so best to leave that one off.

Send with max. TX power, when enabled at boot (and left on) will use the same amount of TX power as it used to do.
So if you checked it and then tested, it is best to perform a cold boot to make sure it does work as before.

Another thing you can try, is to use B/G only, as that's not enabled on your setup (stated max. TX is at 14 dBm, which indicates 802.11n)

And IMHO, the ESP01S is one of the most stable units when looking at the WiFi connection, where many Wemos D1 mini's can be very poor in that department. You could try either a 'beta' or 'alt_wifi' build if that is available for the current build configuration you are using, that can improve things in the WiFi behavior (YMMV).
